A wreath you can eat. A 6 inch sweet French pastry circle forms the base, dressed with madeleines dipped in festive green chocolate, pieces of rich dark chocolate brownie, fresh seasonal fruit and delicate meringue crumbles that fall like snow across the top. The Medovik Man £75 Built from three layers of thick, deeply flavoured honeycake dough and filled with white chocolate ganache and caramel, this is our most joyful Christmas creation. He is generous, richly spiced and the kind of thing that disappears faster than expected. Medovik is a traditional Eastern European honeycake with a long and well-loved history. Our version uses a thick, substantial dough. This is something to be cut at the table and shared with those you love. He tends to sell out. Order early.

Our best-loved Crescent Cake becomes something even more spectacular for the season. This festive 8 inch celebration cake is finished with a full perimeter wreath of seasonal herbs, spices, fruits, macarons and chocolates — a complete circle of Christmas on a single cake.

Serves 24 to 26 dessert portions. Available in three exclusive seasonal flavours:

• Winter Red Velvet — our red velvet cake with a tart raspberry filling and cream cheese buttercream.

Amande (The Christmas Edition) From The Patissier's Collection £230

This is the first time Amande has been available to order and we are releasing it as a Christmas exclusive before the full Patissier's Collection launch.

Five individually prepared components, assembled in sequence and left overnight to stabilise into something clean, precise and quietly extraordinary. The vanilla sponge is soaked in an orgeat syrup (a French almond and orange blossom preparation used widely in patisserie) that carries deep almond warmth and a subtle floral note through every layer. The coffee and white chocolate mousse is airy and complex. The dark ganache sits thin and intense between the mousse and the mascarpone crème — a moment of sharp contrast before the finish resolves into something smooth, rich and cool. The detail lies in the cross-section: pale vanilla sponge, soft mousse, a fine dark line of ganache and a white mascarpone layer. Quietly dramatic. The exterior finish for this Christmas edition is a deep velvet spray in forest green or burgundy with gold leaf detail. This is cake is truely something as considered as it tastes.
